Your Role: To understand and perform all aspects of bar maintenance in terms of opening, closing, cleaning procedures and general procedures daily. To understand all aspects of product knowledge for the creation and dispense of drinks and for table maintenance. To act as directed by seniors. To give the highest standards of hospitality at all times. To consistently improve upon personal standards of professionalism. Essential Duties and Responsibilities Guest satisfaction Ensures to deliver the brand promise and provide exceptional guest service at all times. Exercise responsible behaviour at all times and positively represent the restaurant team and Rosewood Hotels & Resorts Ensures that all guest and internal customer complaints are resolved in a quick and efficient manner. Maintains positive guest and colleague interactions with good working relationships. Operations Guests Ensure that the customers dining experience is one to remember Maintain a high profile during service whilst being polite and helpful Promote and establish a regular customer base, remember their likes and dislikes Smile and maintain eye contact with customers Provide prompt, unobtrusive, attentive service Maintain high standards of personal appearance, always wearing the full, correct, clean, uniform. Maintain a high standard of personal hygiene Prior to Service Report for duty on time and be prepared for your shift Adhere to agreed break times Ensure the bar has had all required opening procedures adhered to prior to starting a shift Ensure all MEP requirements have been met prior to service: Requisition all necessary supplies Transport supplies from storeroom to bar set-up area Stock ice Check cleanliness and condition of bar unit (C02 lines, soda tanks, soda guns, drain, etc.). Check condition and cleanliness of blender, shaker and other tools. Check temperature of refrigeration units. Ensure all out of stock items have been issued in the correct format Ensure all stocks have been brought from cellars in the appropriate manner and time During Service Take instruction from your supervisor, anticipate their requirements Control and manage your section Serve within the structure of the order of service. Respond to any menu/drinks queries with knowledgeable answers. Ensure that individual Mise en Place for each order is known and placed on table. Understand customers to be prioritised - VIP’s unhappy customers, regulars etc. Ensure your working environment remains clean and tidy. Ensure the customers’ needs come first. React promptly and deal with any issues, complaints, breakages, spillages in the correct manner. Communicate any unresolved issues to the supervisor. Provide consistent positive attitude when dealing with other associates. To provide excellent teamwork to assist others. After Service Ensure bar is re-stocked. Ensure rubbish is removed. Re-establish MEP requirements. Ensure everything is left clean and tidy. Report any outstanding issues to the Supervisor/Head Bartender/Bar Manager. Follow closing procedures precisely. Ensure the cellar spaces are maintained in the appropriate manner. KNOWLEDGE REQUIRED: To have a full working knowledge of all beverage items to include wines. To have a full understanding of all items of equipment, their uses, and where they are kept To have a thorough working knowledge of the POS system. Standard Responsibilities Comply and adhere to the Rosewood company policies. Take on other tasks in addition of the ones stated, in a reasonable framework. Be a “brand ambassador” at all times and ensure brand integrity and clarity are always maintained. Model the company’s culture, vision, mission and core values at all times. Review Forbes / Rosewood Brand standards and quality standards (LQA) on a regular basis and ensure they are maintained and delivered at all times. Ensure new technology and equipment is embraced, improving productivity whilst taking work out of the system. Establish and maintain an inclusive environment by ensuring effective two ways communication processes are set up (individual reviews, regular departmental meetings). Responsible for the recruitment, in conjunction with the Talent & Culture Department, of associates. Identify training and development needs on an ongoing basis through hands-on support and frequent interaction with associates. Lead by example in terms of appearance, mannerism, etiquette, behavior conduct, principles and values.
