About the role You will prepare high-quality sushi, sashimi and rolls for a modern Japanese fusion menu, working alongside our Executive Chef and Sous Chef. This is a chance to help build a new kitchen from the start. Responsibilities • Prepare and season sushi rice to our standards • Slice fish and seafood with precision • Prepare sashimi, nigiri and rolls with consistent presentation • Follow approved recipes, portion control and food-safety rules • Keep the sushi station clean, organized and well stocked • Support and train junior kitchen team members Requirements • Minimum 3 years of experience in a Japanese restaurant • Strong knife skills and sushi rice preparation • Knowledge of fish handling and food safety • Valid health card • Ability to work shifts, including weekends and evenings What we offer • Salary and benefits based on experience and interview • A new restaurant with a modern concept and a professional leadership team • Opportunity to grow into a section lead role Show more Show less
